Stabilization of the emulsion has a decisive influence on the product quality, as it prevents the microcapsules from being destroyed during subsequent processes, thereby protecting the contents from oxidation.

Microencapsulation involves embedding hydrophobic substances into a matrix, with the aid of continuous granulation and drying. Encasing these substances within a polymeric or non-polymeric material allows manufacturers to achieve varied end goals, for example, controlled release under specific conditions, enhancing sensory qualities by masking unpleasant tastes, aromas, or flavors and preventing degradation from environmental factors.
